Madame Fù is proud to announce an exclusive 4-hands dinner collaboration that brings together two of Hong Kong's most distinctive culinary voices. For a limited time, Madame Fù Executive chef , Chef Kit Liao and Chef Margaret Xu will join forces to present
"The Hong Kong Story" – a tasting menu that celebrates the soul of Cantonese cuisine through tradition, craftsmanship, and the unmistakable flavours of local ingredients.
Taking place on 11 & 12 September 2026, with dinner served at 7:00pm, the event brings together Executive Chef Chef Kit Liao and Chef Margaret Xu for a limited 4-hands dinner collaboration that celebrates Cantonese tradition, local ingredients,
and the craft behind Hong Kong’s most expressive flavors.
Why The Hong Kong Story matters
Hong Kong’s food identity has always been layered. Cantonese technique forms the foundation, but the city has never stood still.
Chef Kit Liao's East-meets-West technique elevates tradition to art—striking the perfect balance between Eastern depth and Western finesse. Chef Kit has led the restaurant to the Tatler Dining Best Restaurants Award and earned the Best of the Best MASTERCHEF -placing him among the culinary elite of the continent.

Chef Margaret Xu is a visionary chef known for her deep connection to Hong Kong's terroir. She draws inspiration from old Hakka techniques and tends to her own farm, where she crafts self-fermented sauces, pickles, and honey marinades from her own hives.

For this 4-hands collaboration, Chef Margaret brings her signature fermented sauces and locally grown vegetables to merge with Chef Kit's culinary artistry – a union of terroir and technique, tradition and innovation.
A menu shaped by dialogue, not compromise
The Hong Kong Story has been framed around that idea, with Chef Margaret’s sauces
and preserved ingredients acting as a foundation, and Chef Kit’s Cantonese techniques giving them structure.

That balance is especially relevant now, as more diners look for meals that offer both pleasure and meaning. Local ingredients are not valuable because they are trendy. They matter because they carry context. They tell diners where the food comes from,
who made it, and why it tastes the way it does.
